It’s that time of year again. Spring is in the air along with the first whiffs of charcoal smoked meat! We look forward to the great thaw every year and try to get grilling as early as possible, even if none of the guests care to join in the backyard, bundled up in non-flammable down jackets. But for the sane who do wait until spring, now is the time to start dusting off your grill or looking for a new one.
We first tried the Big Green Egg at a food festival in Oslo. From it’s massive yawning ceramic jaws came the most succulent ribs we’ve ever tasted this side of the Atlantic. This bad-boy is just one of many ceramic grills now on the market but it is hands down one of the best. These dome shaped beasts are a modern reimagining of the ancient Japanese Kamado ovens which were originally made of clay.
We’re currently in the process of trying to find enough space on our back porch (bye-bye Weber?) to put one of these grills and we suggest you do the same!
